saladChef Roda’s Balsamic Fusions are exciting new ways to jazz up any salad. They also make a great marinade for vegetables, steak, poultry and even fish.

Classic Balsamic Fusion

  • Marinate 4 Portobello mushrooms in Classic Balsamic Fusion for 1 hour. Grill or roast mushrooms until fork tender and stuff with goat cheese and toasted pine nuts. Place in pre-heated 350 degree oven for 5 minutes. In the meantime, reduce 3 oz. of Classic Balsamic Fusion on low to medium heat, until one half of dressing has evaporated. When Portobellos are removed from oven, drizzle balsamic reduction over top. Use as appetizer or place over your favorite salad.

  • Marinate boneless chicken breast in Classic Balsamic Fusion for at least 1 hour. Grill chicken over low to medium heat until done. In a large mixing bowl, place the following items: mixed greens, or tri- color salad (arugula, endive and radicchio), marinated artichokes, roasted peppers, fresh mozzarella, calamatta olives, red onions, grape tomatoes, and candied walnuts. Toss salad with Classic Balsamic Fusion and lay grilled chicken breast on top.

  • Reduce 4 oz. of Classic Balsamic Fusion by one-half on low heat. Grill over low heat strawberries, melons, oranges, pineapple and figs which have been marinated in Classic Balsamic Fusion, Drizzle reduced Classic Balsamic Fusion over grilled fruit. Serve immediately.

Hot Italian Pepper-Rabe Balsamic Fusion

  • In a large mixing bowl, place mixed greens or tri-color salad (arugola, endive and radicchio) add sharp provolone cheese, toasted pine nuts, roasted peppers, marinated mushrooms and sun-dried tomatoes. Toss with Hot Italian Pepper-Rabe Balsamic Fusion.

  • Marinate a hearty piece of fish (such as swordfish, halibut or tuna) and grill or roast over low heat, occasionally basting with Hot Italian Pepper-Rabe Balsamic Fusion. Cook until desired temperature. Add over suggested salad or place over your favorite starch and vegetable.

String Bean Salad Balsamic Fusion

  • In a large mixing bowl, place crisp romaine lettuce, dried cranberries, diced apples, raisins, pecans, diced proscuitto and shaved Pecorino Romano cheese. Toss with String Bean Salad Balsamic Fusion.

  • Marinate your favorite steak or (boneless chicken breast) for at least 1 hour. Grill or roast over low to medium heat. Cook until desired temperature. Slice and place over salad or your favorite leafy vegetable which has been sautéed in garlic, oil and chicken stock.
